The Scottish Highlands’ atmosphere – complete with tasteful dry stone wall dividers – are transported to town via Tom Kitchin’s highly skilled, knowledgeable and charming serving team dressed in traditional kilts.

Tom Kitchin, being Scotland’s youngest ever recipient of a Michelin star at the age of 29 made Kitchin the youngest Michelin star recipient in the world.

The Kitchin’s chef patron, Tom Kitchin served his early apprenticeship at the world famous Gleneagles hotel and subsequently worked with amazing French chefs Guy Savoy, Pierre Koffmann and Alain Ducasse – all whom have been awarded three Michelin stars. Tom Kitchin’s masterly cooking melds French style with seasonal Scottish ingredients. Tom Kitchin’s an Edinburgh Michelin star indeed! The Kitchin restaurant was awarded the title of Scotland’s ‘Best Restaurant’ for the second year running at the third annual World Culinary Awards.

Not a Michelin Star restaurant, but we have included details of the upscale Fingal, the luxury floating hotel, by Royal Yacht Enterprises, because of its close proximity to The Kitchen, by Tom Kitchin and Restaurant Martin Wishart, both in Leith, Edinburgh.

As overnight accommodation is not permitted on the Royal Yacht Britannia, her custodians, The Royal Yacht Britannia Trust developed an additional income funnel that was not dependent on visitors attending the splendid former Royal Yacht Britannia.

Therefore, a luxury floating hotel concept servicing the upscale leisure market – and also to help attract more evening events to the former Royal Yacht Britannia – was formulated by the Trust’s trading company: Royal Yacht Enterprises – The Fingal Luxury Floating Hotel came into being.

Berthed little over half a mile away from The Kitchen, is Royal Yacht Enterprises‘ magnificent floating hotel “The Fingal” at Alexander Dock, Edinburgh, Scotland.

The Blythswood Shipbuilding Company of Glasgow built the hotel’s original historic lighthouse ship, and after a period of private ownership under the name of “Windsor Castle” and a recent £5million conversion – which took more than two years to complete -creating 14 bedroom cabins on the main deck, including four splendid duplex rooms and a spectacular round guest glass lift. Each of the total of 23 cabins aboard Fingal is named after Scottish lighthouses.

Fingal opened to the public in January 2019 and received great acclaim, but suffered lockdowns in 2020/2021 due to the Covid pandemic, along with the rest of the industry.

Now is perhaps the time to arrange a visit or gift voucher, especially if you have a decent accommodation budget, love things nautical, ships and yachts. The staff are attentive like to share the story and tickets to the Royal Yacht Britannia are complementary.

Opening in 1999, the Restaurant Martin Wishart has held a Michelin star since 2001 – and voted The Sunday Times 5th best restaurant in the UK.

Like the Edinburgh Michelin star restaurant, The Kitchin, Restaurant Martin Wishart is located in the port of Leith, Edinburgh where he expertly delivers modern European cuisine using classical French techniques – he trained  Le Gavroche and Martin has worked with Albert Roux, Michel Roux Jr, Marco Pierre White and John Burton-Race – proudly using the very finest Scottish ingredients including locally sourced fish and shellfish.

Set in a converted shop on an unpretentious retail parade, a little away from the centre of Edinburgh, Condita has subtle interior decor varied to suit the time of year – interesting modern seasonal dishes are confidently prepared and skilfully presented by chef Conor Toomey.

The amiable Michelin starred chef Conor, formerly of the Isle of Eriska Hotel, is more than willing to find time to talk should you have questions.

Condita offers seasonal menus, mainly organic – with most of the produce sourced from a 19th-century Victorian walled kitchen garden in the Scottish Borders. Their Michelin-starred no-choice tasting menu lasts around two and a half hours.
