Mana Manchester: Chef-Owner Simon Martin
Simon Martin’s career started at the UK’s Michelin Starred Chester Grosvenor, under the tutelage of Simon Radley, before spending two years at the 3 Michelin Star Restaurant Gordon Ramsay in London.
Simon Martin then moved to East Perth in Australia to work in the “Best Restaurant in Western Australia”, Restaurant Amusé, and later, Opus at The Richardson. Mexican cuisine is clearly close to Simon Martin’s heart, having spent 14 weeks living and working at Tulum in Mexico in 2017, and his passion for Mexican food shines through.
Returning to England, Simon spent two years at Gilpin Lake House in the Lake District, Cumbria, before joining René Redzepi’s team at Noma for two years.

With Simon Martin’s phenomenal skill and global experience, Mana has progressed to become the only Michelin Star restaurant in Manchester as of October 2019, and Mana is still the only Michelin Star restaurant in Manchester to this current day in 2023.
With Simon Martin’s mission to champion seafood from our British waters and in-season produce from local farmers and producers, Simon Martin has injected, Nordic, Japanese, Mexican, and British plus other global methodologies and ideologies into his superb 12-16 course set menu.

In the impeccable open kitchen, Simon Martin and his team create exciting modern dishes. The dishes are packed with originality but are complex in their delivery. The menu is a 12-16 course surprise, and they unfold throughout your time there and is perfectly timed and paced.
